Turkish Bean Salad
1 can small white beans (19 oz) rinsed and drained
1 x red onion thinly sliced
1/2 cup chopped parsley
1/4 x green bell pepper seeded and finely chopped
3 lrg black olives pitted and chopped
2 tbl fresh lemon juice
2 tsp olive oil
1/2 tsp salt
Freshly ground pepper - to taste
4 cup torn lettuce leaves
3 x lemon slices (to 4)
* In a medium bowl, combine the beans, onion, parsley, bell peppers, olives, lemon juice, oil, salt and pepper. Cover. Let stand until the flavors are blended, at least 1 hour, tossing several times.
* Serve the lettuce, topped with the salad and garnished with the lemon slices.
