Turkish Bean Salad

Ingredients :

2 cup Drained cooked white beans, warm or at room temperature
1 cup Thinly sliced red onions
1/2 cup Chopped fresh parsley
1/4 cup Finely chopped green bell pepper
1/4 cup Finely chopped red bell pepper
2 tbl Fresh lemon juice
1/2 tsp Salt
Freshly ground black pepper to taste
4 cup Torn lettuce leaves
Lemon slices, garnish

Method :

* 1. In a medium bowl, combine beans, onions, parslely, bell peppers, lemon juice, salt and black pepper. Cover and let stand 1 hour or longer, tossing serveal times to blend flavors. (It doesn't say to keep this in the refrigerator, but I did).
* 2. Line 4 plates with lettuce. Spoon one-fourth of the salad onto each plate. Garnish with lemon slices.

Turkish Bean Salad

Ingredients :

1 can small white beans (19 oz) rinsed and drained
1 x red onion thinly sliced
1/2 cup chopped parsley
1/4 x green bell pepper seeded and finely chopped
3 lrg black olives pitted and chopped
2 tbl fresh lemon juice
2 tsp olive oil
1/2 tsp salt
Freshly ground pepper - to taste
4 cup torn lettuce leaves
3 x lemon slices (to 4)

Method :

* In a medium bowl, combine the beans, onion, parsley, bell peppers, olives, lemon juice, oil, salt and pepper. Cover. Let stand until the flavors are blended, at least 1 hour, tossing several times.
* Serve the lettuce, topped with the salad and garnished with the lemon slices.
