Lokum Roll
Welcome to Mutevazi Lezzetler video pages!
at this episode, we are sharing a sweet bun recipe
"Lokum Roll"
let's see the short and economic ingredients list
the we will see how to make it
1 pack of instant yeast
1/2 pack butter
1 + 1/2 cup warm water
1 egg
1 tbsp granulated sugar
enough flour
and 1/4 tsp salt
for the filling; about 9 – 10 oz rose lokum
for the upper side; 2 tbsp castor sugar
as you see the ingredients…
are easy-to-find and simple
now I'll get them together as a dough
I have 1 + 1/2 cup warm water
I'm pouring it into the mixing bowl
I'm adding 1 tbsp granulated sugar
1 pack of instant yeast
you may find it easily
it is also called as “cabuk maya” in Turkish
I'm mixing it with flour and adding into the water
I'll be mixing it by fingertips until the sugar dissolves
I'm adding 1/4 tsp salt also
I'm adding some flour, before adding the butter
I'm keeping on kneading it by fingertips
I'm adding the eggs now
and also the melted and cooled butter
after mixing the liquids with some flour…
I'll be kneading the mixture by adding flour little by little…
until the dough reaches the right consistency, not too hard also not sticking to hands
the dough has reached the proper consistency
as you know that kind of dough becomes better by kneading more and more
we are using instant yeast, so there is no need to rest it too much
I'll cover and rest it just for half an hour…
at room temperature until it turns into double size
the dough has grown and seems so nice
I'll rest it for a while more, while cutting the lokum pieces
I prefer rose lokum especially, because of its color
it has a nice pink color
as you see it is a little bit hard to cut it, because it sticks
to prevent it, I'm covering it…
with some flour to make it easier
it is time for the dough
I'm kneading it for a while more
as you see it is too nice
I'm dividing the dough into 4 equal pieces
then I'll fix it of course
by this way I divided the dough
well, I'm rolling out the first piece…
over floured bench, but not too thinly
it is easy to roll it out, it has a nice consistency
after rolling it out into the service plate size
I'm cutting it into 2 pieces
I'm placing the lokum pieces side by side, also by stretching a little
by this way
I'm forcing over a bit also
the bun is called as “lokum roll”
lokum is known as “Turkish Delight” also
and you know what “roll” means
so we are rolling it now
after rolling it…
I'm slicing it into the pieces, each has 1 inch thickness
I'll prepare the other part by the same way also
I'll place those buns into the baking tray also
the tray that is greased or covered by grease-proof paper
I'm placing with some spaces between each other
I'll repeat the same processes for the other dough piece
you may use plain lokum also for this part
the ones with walnut or hazelnut
I prefer rose lokum because of its pink color
I'm rolling it by this way
and flattening it
after making the same processes for the remaining 3 dough balls, I'll bake
I've placed the last bun also
I'll not spread anything over the pieces
I'll rest them for about 15 - 20 minutes in the tray
and then I'll bake in the oven that is preheated to 392 F
the buns turn to red nicely
I'm sifting 2 tbsp of castor sugar all over
"Lokum Roll"
