Corn Bread

Servings: 1
1 c Cornmeal, yellow
1 c Cornmeal, white
4 tb Sugar
1 ts Salt
1 Egg, well beaten
1 c Milk, skim
1 c Flour
4 ts Baking powder
2 tb Butter, melted

Add the sugar and salt to the cornmeal. Beat the egg well and pour into the milk; stir this mixture into the meal, beating thoroughly. Sift the flour and baking powder into the meal, add the melted butter and beat hard. Pour the mixture into a greased pan and bake at 400-F until brown. To make a thin crisp Johnny Cake, use an oblong pan and spread batter thinly. For a soft loaf, spread batter thickly.

CORN BREAD

2 1/2 c warm water
1 tbsp dry yeast
2 dates
2 c whole grain corn meal
1/3 c sunflower or sesame seeds
blended dry to a fine meal
1 c whole wheat flour
1 1/4 tsp salt

Blend dates and warm water. Add yeast, and let stand until it foams. Mix dry ingredients. Add yeast mixture and stir well. Pour into a shallow baking pan and let stand 10 minutes.
Bake 45 minutes at 375o F. Yield: 16 servings.

Cornbread

2 c. warm water
1/4 c. cashews
1/4 c. honey
2 tbsp. gluten flour
1 1/2 tbsp. active yeast
3/4 c. whole wheat flour
pinch ascorbic acid (opt.)
3/4 c. unbleached flour
1 1/2 c. cornmeal
1 1/2 tsp. salt

ADD honey and ascorbic acid to warm water, DISSOLVE yeast in this water. Allow to stand until bubbly. LIQUEFY yeast mixture, cashews, and vital gluten. ALLOW to stand for a few minutes until the yeast begins to work. COMBINE all ingredients in a large mixing bowl. USE a sturdy spoon or an electric beater. PREPARE a shallow square pan with vegetable spray. LET RISE in a warm place for about an hour, or until almost double. BAKE about 25 minutes until browned at 350° . Wait one day to serve.

Cornbread

2 c. soaked soybeans
2 c. corn meal
1/4 c. quick oats
1 1/2 tsp. salt (part Vege-Sal is good)
2 c. water
1/4 tsp. onion powder
1–2 tbsp. honey

WHIZ soaked soybeans, quick oats, honey, salt, onion powder and water in blender.
MIX with corn meal. BAKE in oil-sprayed, preheated iron skillet at 400° for 50-60 minutes. SERVE hot, right out of the oven. Cast iron corn pone pans are excellent to use with this recipe.

Cornbread

1 1/2 cups cornmeal
1/2 cup flour
4 tsp. baking powder
1/2 tsp. salt
1 cup milk
1 egg, beaten
1/4 cup oil
sugar to taste

Mix cornmeal, flour, baking powder, salt, and sugar. Mix milk, egg, and oil.
Add milk mixture to cornmeal mixture. Stir only enough to mix. Preheat a greased baking pan, then fill the pan 1/2 full. Bake at 425 F. about 25 minutes or until light brown.

Mix together one and two-third cups corn meal, one-third cup flour, one-fourth cup sugar, one teaspoonful salt. Beat two eggs until light, and add to them one cup sour milk, and one cup sweet milk in which one teaspoonful soda has been dissolved; mix thoroughly. Have the frying pan very hot, with two tablespoonfuls butter; pour the batter into it; then pour into this mixture another cup of sweet milk, but do not stir the cake. Place pan into hot oven, and bake one-half hour.

Two heaping cups corn meal, one heaping cup flour, two teaspoons baking powder sifted with flour, whites and yolks of three eggs beaten separately, two and one-half cups sweet milk, one tablespoon melted butter, one tablespoon white sugar, one teaspoon salt. Bake steadily in a moderately hot oven.

Sift together corn meal, flour, sugar, salt, and baking powder; rub in lard cold; add the egg; mix to a moderately stiff batter. Bake in rather hot oven thirty minutes.

Two cups sweet milk, one egg, one and one-half teacups wheat flour, two teacups Indian meal, two tablespoonfuls sugar, a little salt, four teaspoonfuls cream tartar put in with flour, two teaspoonfuls soda dissolved in warm water; add this last. Bake in gem pans in a quick oven.
