Tortellini Soup

1 pound Italian sausage
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
1/2 cup water
8 ounces fresh tortellini pasta
1 cup sliced carrots
2 cups stewed tomatoes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
8 ounces tomato sauce
1 1/2 cups sliced zucchini
2 green bell peppers, seeded
and cubed
3 tablespoons chopped fresh parsley

1 Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.
2 Cook onion and garlic in the drippings until tender. Add broth, water, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.
3 Add zucchini, green peppers, parsley, and tortellini. Simmer another 25 minutes, covered, for fresh tortellini, or 45 minutes, covered, for frozen tortellini. Serve with fresh parmesan cheese sprinkled over the top.

2 cans (14 oz. each) vegetable broth
1 pkg (9 oz.) tortellini
1 can (14 oz.) stewed tomatoes, chopped up
1/2 bunch fresh spinach, cleaned, stemmed, and torn
~6-8 fresh mushrooms, sliced
6 fresh basil leaves or 1 Tbsp. dried basil
1/4 cup shredded parmesan

Instructions:

Sautee garlic in butter. Add broth and bring to boil. Add tortellini and simmer for about 5 minutes. Add tomatoes, spinach, mushrooms, and basil. Simmer for 2-3 minutes. Stir in parmesan and serve.

TORTELLINI SOUP

1 medium onion, chopped
1 garlic clove, minced
2 C. (14 1/2 oz.) low−sodium chicken broth
8 oz. cheese tortellini
1 (14 1/2 oz.) can no−salt added, Italian stewed tomatoes
1 (10 oz.) pkg. frozen chopped spinach, thawed and drained

In a large saucepan coated with nonstick cooking spray, sauté onion and garlic until tender. Add broth; bring to a boil. Add the tortellini; reduce heat.
Simmer for 10 minutes or until tortellini are tender. Stir in tomatoes and spinach; heat through. Serves 7.
DIABETIC EXCHANGES: One 1−cup serving equals: 1 starch, 1 vegetable, 1 fat;
ALSO 147 calories, 186 mg sodium, 14 mg choloresterol, 22 gm carbohydrate, 8 gm protein, 4 gm fat.
