Source: Family Circle, June 1991

2 c. all-purpose flour
1.5 tsp. salt
3 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1 c. oil
3 eggs
1 tsp. vanilla
1-1/2 c. sugar
3 c. shredded zucchini
1/2 c. chopped walnuts
1/2 c. raisins

Preheat oven to 350F. Grease two small loaf pans. Sift together flour, salt, cinnamon, baking soda, baking powder. In a large bowl whisk together oil, eggs, vanilla, sugar. Stir in flour mixture and remaining ingredients. Divide into prepared pans. Bake for 55-60 minutes or until cake tester comes out clean. Cool on wire racks to room temperature.

1 ts Cinnamon
2 1/4 c Bread flour
1/2 ts Ground cloves
1 tb Dry milk
3 tb Zucchini; grated
1 ts Salt
3/4 c Water
1 tb Butter
1 ts Dry yeast
1/4 c Walnuts (1 oz); chopped

Bake (Rapid) mode may be used. Place all ingredients (except liquids and yeast) inside the bread pan. Add liquid ingredients. Close cover and place dry yeast into the yeast holder. Press start.

Zucchini Bread

• 3 eggs
• 1 c. oil
• 2 c. sugar
• 1 t. vanilla
• 2 1/2 c. zucchini, peeled and grated
• 3 c. flour
• 1 T. cinnamon
• 1 1/2 t. baking powder
• 1 t. baking soda
• 1 t. salt
• 1c. chopped walnuts

Beat eggs until foamy. Add oil, sugar, vanilla and mix well.
Stir in zucchini. Combine the dry ingredients and mix well. Fold in nuts. Pour into two greased and floured 9 x 5- inch loaf pans. Bake at 325° for one hour.

2 3/4 C. all−purpose flour
1/2 C. wheat germ
1 T. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 tsp. ground cinnamon
1/2 tsp. each ground nutmeg, mace and cloves
1/2 C. skim milk
1/4 C. vegetable oil
6 pkg. Sweet'N Low granulated sugar substitute
1/2 C. sugar
4 egg whites (or scant 1/2 C. liquid egg substitute)

Preheat oven to 350ºF. Spray a 9 x 5−inch loaf pan with nonstick cooking spray.
In a medium bowl combine all ingredients up to the milk.
In a large bowl combine milk, oil, Sweet 'N Low, sugar and egg whites.
Stir in dry ingredients and zucchini; blend well. Pour batter into prepared pan. Bake 1 hour 10 minutes to 1 hour 20 minutes or until a wooden pick inserted in center comes out clean. Cool on wire rack 5 minutes.
Remove from pan and cool completely on rack. Makes one large loaf.
Per slice (14 slices per loaf): 180 cals, 5 g prot, 5 g fat, 30 g carbos, 0 mg choles, 278 mg sod
Diabetic Exchange: 2 starch/bread, 1 fat

Zucchini Bread

Yields 2 loaves
3 Eggs
1 cup Vegetable Oil
2 cups Sugar
2 cups Zucchini, grated and well drained
1 teaspoon Vanilla
3 cups Flour
1/2 teaspoon Salt
1/4 teaspoon Baking Powder
1 teaspoon Baking Soda
3/4 teaspoon Nutmeg
1 tablespoon Cinnamon
1/2 cup Raisins (optional)

Mix together eggs, oil, sugar, zucchini, and vanilla; set aside. Mix together flour, baking powder, soda, nutmeg, and cinnamon; add to first mixture. Add raisins if desired. Pour into 2 greased and floured loaf pans. Bake at 350° for approximately 45 to 50 minutes or until the center springs back when touched.
