HOLIDAY FRUIT MOLD
1 20 oz can crushed pineapple, drained (save juice)
4 tbsp Emes gelatin
2 golden delicious apples, diced
1 12 oz can Tree Top Very Berry juice Concentrate
2 c choice of berries (blueberries, raspberries, boysenberries, or blackberries.)
Dissolve Emes gelatin in reserved pineapple juice, simmer 1 minute. Mix first 4 ingredients in a bowl. Add frozen berries, and 1 or 2 sliced bananas. Pour into a jello mold. Chill several hours. Serve on a platter garnished with red leaf lettuce.
