Tongue with Garniture (video)

at this episode, we are sharing an offal dish recipe
"Tongue with Garniture"
before starting to cooking, let's see the ingredients
1 calf tongue
3 cups of water
salt
for the garniture, 1 medium size carrot
1 medium size potato
1 cup of canned green peas
3 tbsp sunflower oil
salt
for the upper side; 1 cup of tongue broth
1 tsp flour
1pinch salt
and black pepper
I'll cook the meal in pressure cooker
I'm placing the tongue into the cooker
I'm sprinkling some salt all over
and I'm adding the 3 cups of water on it
I'm covering the lid on and placing the cooker over the heat
after the pins movement, I'll cook it for 45 minutes more
the pin has moved, I'm lowering the heat and setting it to 45 minutes
I'll turn off the heat 45 minutes later
while boiling the tongue, let's prepare the garniture
we need 1 carrot and 1 potato
I'm peeling the carrot firstly
I'm removing the endings, I'll dice the carrot
I'm cutting the carrot into 3 pieces by this way
then I'm slitting
then I'm dicing into small pieces
yes the carrot is diced, now it is time for potato
it is really very easy to cook this recipe
but boiling the tongue takes too much time
I'm peeling the potato
the potato is peeled, I'll dice it also as the carrot
firstly I'm slicing into pieces, each has very low thickness...
then I'm cutting it by these ways
the potato is diced also, you may add onion also if you want
we are using onion also in Mutevazı Lezzetler recipes book
but at this episode, we are not using onion
I'm starting to cook the garniture also
I'm pouring 3 tbsp of sunflower oil…
into the skillet
the carrot is harder, so I'm adding it firstly
I'll fry it for about 5 minutes
the carrot pieces are softened now, I'm adding the potato pieces
I'll be frying both of them for about 5 more minutes
potato pieces are softened also
well, I'm adding canned green peas also
after frying them 2 - 3 minutes, the garniture is ready now
the peas are cooked also, I'm adding some salt now
I'll cook it just for a while more
and then, I'll remove it from the stove
we will use an upper side mixture also, let's prepare it
such a bowl is sufficient
I'm adding 1 cup of tongue broth
flour
a bit salt
and black pepper
I'll cook it for a while more, after it reaches the boiling temperature
the tongue is boiled, it has taken a long time, 45 minutes…
I'm removing it from the water, I'll skin it
it is too easy to skin the tongue by this way
you should skin the tongue, while it is a little bit hot
because it becomes harder, when it cools down
now, I'll slicing the tongue into thin pieces
it is hard to digest this meal, but I advise you to cook it at least for once in a year
it is too delicious
I'm keeping on slicing it
I'm placing the slices carefully
it becomes easier to place them, if it they cool down a little
I'm pouring the sauce all over
if you stop cooking now, this meal is called as “Tongue Roast”
but, we are adding some garniture, so it is called as “Tongue with Garniture”
