Kebap with Dough (video)

Hamurlu Kebap
This recipe has subtitles in both Turkish and English





Sincere compliments from Mutevazi Lezzetler Cuisine
we are feeling the happiness of being together with you again...
at this episode, we are sharing a kebap recipe "Kebap with Dough"
let's see the ingredients list firstly, then we will see how to cook
for the dough; 1 + 1/2 cups of warm water
3 tbsp vegetable oil
1 pack of baking powder
1 tsp salt
flour, as much as the mixture gets in
for the filling; 1.10 pounds of ground calf meat, medium fatty
1 pack of mushrooms (about 14 oz)
2 medium size onions
1 tbsp mixture of pepper and tomato paste
5 tbsp vegetable oil
4 medium size tomatoes
3 long green peppers, medium size
1 tsp salt
and black pepper
"for the upper side; 3 garlic cloves"
and 1 cup of yogurt
I'm starting by preparing the dough
it is too simple to prepare the dough
as I mentioned we have 1 + 1/2 cups of water for the dough…
I have poured 1 cup of water into the bowl, now I'm adding the half...
I'm adding 1 tsp of salt
3 tbsp vegetable oil
and I'll add flour, as much as the mixture gets in
I'm adding some flour, before adding the baking powder
well, I'm starting to knead it
now, I can add the baking powder
I'll be kneading it…
until it stops sticking to my hands, but it must not be too hard
by adding flour time to time during the kneading
I'm keeping on kneading the dough by adding flour
it has reached the right consistency almost
I'll knead it for a while outside of the bowl to make it smoother
look, it is not too hard, but also it is not too soft
it has a nice consistency
while resting the dough, let's prepare the filling mixture
I'm dicing the 2 medium size onion
as we do for all dishes
I made 5 tbsp of vegetable oil hot in the pot
now I'm adding the onion pieces
I've added salt also to shorten the cooking time of the onion
I'll fry it for about 10 minutes
meanwhile, we will be preparing the other ingredients
while frying the onion
I'll be cutting the mushrooms. I am cutting them a later than onions to prevent them...
from darkening by the time
this is the size we desire
it is time of adding the meat
as you know, you should fry the meat over high heat as the mushrooms
I'm frying the meat now
by the way I did not give a measurement for the black pepper
you may add how much you want
I'm adding the 1 tbsp mixture of tomato and pepper paste
it is time of adding mushrooms
I'm keeping on frying over high heat…
to keep the juice of the mushrooms
while frying the filling mixture, I'll roll out the dough
I'll roll out the dough, until it reaches the size of the tray
you may imagine it as pizza dough
you may shape it circular or rectangular…
depends upon the shape of your tray
we are using a rectangular tray
so I will try to roll it out rectangular
I think that it has reached the proper size
I'll place it into the tray by stretching out
after placing by this way,
I'll place bake it for 15 minutes, until it turns into pink, in the oven that is preheated to 356 F
I have baked the dough
I did not bake it too much
because we just baked it to keep its form, while adding the filling mixture over it
now I'm placing the mixture over the dough
the mixture seems great
I'm laying it all over
I'll place the tomatoes over the kebap with some spaces between each slice
I have placed the slices, I'm sprinkling some salt now
by this way, tomato slices will soften and become juicy and make the kebap more delicious
finally I'm adding the seeds removed and cut peppers
all over
I will decide the cooking time by controlling these pepper pieces
when the pepper pieces lose their freshness, it means that kebap is ready
now it is ready to place into the oven
I'm placing the tray into the oven that is preheated to 392 F
I'll cook it, until the pepper pieces lose their freshness
now we are getting closer to the final process
I'm preparing the upper side mixture, while cooking the kebap
I'm cutting the garlic
we have 1 cup of yogurt
I'm adding some salt
we did not mentioned the salt at the ingredients list,
because most of the audiences knows it
I'm whisking the mixture of salt and yogurt firstly, until it smoothens
it has a high consistency, so I'm adding just a bit water
it depends upon the consistency of the yogurt
fork is the best tool for this process
I'm adding the garlic now
you may also beaten the garlic instead of cutting
the pieces must be small, that is the point
it is ready now
the kebap is cooked also, seems great
I'll slice it into squares and serve by this way
I've cut, if you wait a little to cool it down, it may be easier to cut
I'm placing into the service plate
I'm pouring about 1 tbsp of yogurt mixture all over
you may just use yogurt instead of garlic addition
I'm placing a pinch of parsley over to garnish it
it is a great kebap, please try it
