Welcome to Mutevazi Lezzetler Cuisine!
at this episode, we are sharing the recipe of my favorite kebap. "Iskender"
let's see the ingredients list
4 flat breads (pide)
1.10 pounds of calf meat
1 pepper
1 onion
2 tbsp tomato paste
4 tbsp yogurt
8 tbsp bulgur pilaf
1 + 1/2 or 2 tbsp butter
4 tbsp vegetable oil
salt
and black pepper
I'm starting by slicing the meat into thin pieces
the meat must be whole piece, it must be boneless
it may be round meat, the important point is that it must be boneless….
and it must low-fat
it is easier to slice the meat after freezing it partially
by this way, I'll be slicing it
the meat is sliced, it is time for onion to cut into small pieces
as you know, to have a sharp knife is the most important requirement of a well done slicing process
I'm slicing by this way
it is sliced, I'll be cutting the pepper into small pieces also
I must emphasize that, after slicing the meat, you should change your chopping board
or you should wash it
by this way we do not let the microorganisms to pass the vegetables
I've washed the board before starting the cut the vegetables
I've cut the onion and pepper, now it is time for cooking
I let the skillet turn to hot firstly
then I'm adding the oil
I'm adding 2 tbsp of vegetable oil into the skillet
2 tbsp of the 4 tbsp mentioned in the ingredients' list
I'm waiting for a while to make the oil turn into hot
and I'm adding the cut ingredients into the skillet respectively
I'm adding the onion firstly, then the pepper immediately
and the thin meat slices
the heat must be high level
as you know that, the heat must be high while cooking meat
the meat has given its broth, now I'm adding the salt and black pepper
the meat is soaking the broth now
I'm grinding some black pepper to keep its fresh smell and taste
I'm adding the black pepper firstly
and just then, I'm adding some salt. I do not give a measure for the salt…
because it depends upon to your taste
I'm keeping on frying it
the meat slices are fried
now we have 2 small processes before serving it
I'm placing it aside…
we have 2 tbsp of tomato paste…
I'm placing the tomato paste into the skillet and I'm adding 1 cup of water…
it was not mentioned in ingredients list and some salt
I'll boil it just a lit bit more after it reaches the boiling temperature
I'll use it later, during the service
the sauce has reached the right consistency

I want to show it, now I'm placing the sauce aside
the final process is preparing the oil that we will pour all over
it was mentioned that 4 tbsp of vegetable oil in the ingredients' list
we have already used 2 of that, now I'm using the remaining two
actually if you use butter instead of vegetable oil
but we are mixing them to make the meal more healthy
all the parts of the iskender kebap is ready right now
now it is time to serve it
I'm slicing the flat bread breads…
which are called as "pide" in Turkish
I'm slicing them into square shaped pieces
yes it is done, now I'm placing these pieces into a platter…
it is the traditional service plate of iskender kebap…
I'm flattening it
after placing the pide pieces, I'm placing 2 tbsp of bulgur pilaf for each portion
there is no need to give the recipe of the bulgur pilaf
but if you desire it, we can share naturally
I'm placing 1 tbsp of yogurt onto the other side
I'm placing the fried meat slices onto the pide pieces
we have prepared this kebap for 4 portion
so I should divide the ingredients into 4 pieces
I'm pouring the cooked tomato paste mixture all over
and finally the oil, it gives a great taste
but the ones who have a cholesterol problem may not add it
I'm pouring some all over
and you may place some tomato slices, pepper,pickle…
or parsley whatever you have as a garniture
we are garnishing by this way
the kebap is ready to serve and seems really delicious
and as you see it is very simple to cook also
you should definitely try it
you should be able to say that:"I can cook iskender kebap"
