Filled Horse Mackerels

at this episode, we are sharing a fish meal recipe
it is called as "Filled Horse Mackerels"
let's see the ingredients list firstly, then we will see how to cook it
3.30 pounds big size horse mackerels
1 bunch of spinach
1 medium size onion
1 egg
1 grated rind of lemon
2 – 3 slices of stale bread
1 tbsp olive oil
1 tsp salt
and grinded black pepper
I'm starting to prepare by dicing the onion into too small pieces
I have washed the spinach very well
It is very important to slice the stems into very small pieces
I'm slicing the leaves thinly, but the stems must be thinner
I'm preparing the spinach by this way
I have 2 – 3 slices of stale bread
2 slices are enough for 3.30 pounds of horse mackerel
our bread is smaller than normal, so I'm using 3 slices
I'm removing the edges of the slices firstly
then, I'm crumbling them into small pieces
now I'll be cooking the filling mixture of the meal
I have 5 tbsp of olive oil
I'm placing 3 of the 5 tbsp into the skillet
and making it a little bit hot
I'm adding the onion pieces into the skillet now
I'll be frying until the onion pieces loses its freshness
the pieces have lost their freshness, also became smaller
as you noticed that I did not boil the spinach pieces
because I want to keep the vitamins and the minerals...
in the meal, not to remove them with the boiling water
I'm be frying it over high heat, until its color changes
spinach has lost its fresh color, I'm adding the salt and the black pepper
after mixing it, I'm removing the skillet from the stove to cool it down
I'll be waiting for about 10 – 15 minutes to cool it down
the filling mixture has cooled down
I've fried the ingredients over high heat especially to prevent them turn into juicy
I did not fry them too much also to keep their color
now we have a few more processes
I'm breaking the egg
and whisking it
I'm adding the egg onto the spinach mixture
I'm gating the rind of the lemon all over
and I'm adding the bread crumbs…
and mixing the filling mixture
thus, the filling mixture is ready
the egg will be keeping the mixture together as a glue
and the bread is as a fill material
also the lemon rind gives its fresh smell into the mixture
now I may start to fill the horse mackerels
I have already removed the heads of the horse mackerels
you may keep them also
that is enough, I'm closing the fish
and I'm spreading 2 tbsp of olive oil over the fish
and placing it into the greased baking tray
there is no need to fill them with too much mixture, that is enough
I have filled all the fishes, now I'll place the tray into the preheated oven, the temperature is 392 F
and I'll cook them, until they turn into red
the fishes are removed from the oven, their surfaces turned into red nicely, it is time to serve
I'll serve it with some lemon slices and parsley
it is delicious and hot
