Tas Kebap with Puree
Welcome to Mutevazi Lezzetler Cuisine!
We are going to cook a meat meal today.
"Tas Kebap with Puree"
Lets see the ingredients first, then we are going to see how to cook it.
2.20 pounds of lamb cubes
2 long green peppers
2 garlic cloves
1 tbsp tomato paste
1/3 cup of sunflower oil
2 cups hot water
1 tsp salt
For the Puree:
1 cup of hot milk
6 potatoes, medium size
1 tsp butter
After seeing the ingredients, now we can cook it.
We have poured 1/3 cup of sunflower oil into the pot and made it hot.
Then, we are adding 2.20 pounds of lamb cubes into the same pot.
We are roasting the meat over high heat, until it gives and soaks its broth again.
While roasting the meat, we can also make the other processes.
We are cutting the onions. You can cut them, however you want.
But, we are cutting them into bigger cubes.
We are mashing the garlic cloves at first, to peel them easier.
At the recipes, which you have to add too much garlic, this method is very useful.
We can place the garlic pieces into the onion plate.
We are cutting the seeds removed peppers. The pieces must not be too small.
After peeling the tomatoes, we are cutting them also.
We are adding finely cut onion and garlic onto the meat.
We are roasting the mixture, until the onion loses its freshness.
It is time to add the pepper and tomato paste.
We are roasting it, until the pepper pieces turn into yellow.
We are adding the tomatoes.
We are mixing it for a while.
We are adding black pepper and salt in it.
As you know, you should add the salt into the mixture lately while cooking meat meals..
.. to prevent the meat from becoming hard.
We are adding 2 cups of hot water in it.
Now, we are covering the lid.
We are cooking it over low-medium heat for 1 hour.
While cooking the kebap, we can prepare the puree.
We have boiled 6 potatoes.
Now we are peeling them, when they are hot yet.
It is hard to hold them.
We are peeling the last potato.
Potato puree is a very popular garniture. Its recipe at lezzetler.com is one of the most visited pages.
After peeling the potatoes when they were hot yet, now we are mashing them by this device.
We will divide them into bigger pieces at first.
Then, we will add hot milk, butter and some salt on it.
Hot potatoes have two advantages.
You can mash them very easily and it melts butter very easily also.
As you can see, the butter started to melt already.
1 tsp butter is enough for 6 potatoes.
We are adding half of the milk, and keeping on mashing.
We are adding some salt. You can add some black pepper also.
But I dont prefer it, because it changes the purees color and taste.
We are adding some milk now.
Adding milk little by little makes the puree better.
There is not any big piece at all, so we can mix it by a spoon now.
We are adding some milk again.
The puree has reached really good consistency.
After preparing the puree, we have place it onto the service plate.
We have also removed the kebap from the stove and rested it for 15 minutes to cool down a little.
We have made a small pool over the puree.
Now we are placing some kebap into this pool.
