Cork Haricot
Welcome to Mutevazi Lezzetler Cuisine!
at this episode, we are sharing a foreign recipe
a Irish recipe, "Cork Haricot"
let's see the ingredients…
then we will see how to cook
2.20 pounds boneless lamb meat
1 onion
2 potatoes
1 carrot
4 garlic cloves
1 tbsp vinegar of grapes
1 cup water
1 tsp oregano
and 1 tsp salt
after the ingredients…
let's see how to cook it
I'm starting by cutting…
I have 1 onion…
dicing it very thinly makes it better
I'm placing it into the plate
I'll be cutting potatoes and carrot
I'm cutting them into bigger pieces, because…
cooking time will be long
I'm chopping the garlic also, but not small pieces
it is time to cut the carrot
as you know carrot is a hard ingredient…
so you may cut it into pieces smaller than the potato pieces
I'll get all these ingredients together now…
I'm using an earthenware pot…
you may use a heat-resistant glass pot with a lid also…
firstly, I'm adding the…
onion and garlic pieces and…
laying them all over the layer
and I'm laying half of the meat also
Irish people prefer to use neck meat for this meal…
but if you don't have neck meat…
you may use any part of the sheep
I'm adding half of the potato pieces…
this meal is very familiar to Turkish “guvec” meal
half of the carrot pieces…
and some of the mixture of onion and garlic pieces
I'm sprinkling some salt…
I'll add salt to the top again
now I'm placing the remaining meat
I'm placing some more onion and garlic again
you may force it, the meat pieces will become smaller anyway
carrot again
normally we do not add oregano at the beginning of cooking, but….
at this recipe, originally it must be added, so I'm adding it now
I'm laying the remaining garlic and onion pieces all over
and salt
as you see, we did not add some oil…
it will be cooked by the fat of the meat
I'm adding 1 cup of water finally
I have forgotten the 1 tbsp of vinegar almost
and I'm covering the lid on…
I'll place the pot into the preheated oven, to 392 F
I have cooked it with 392 F, for half an hour…
I'm turning the heat to 300 F now…
I'll be cooking it for about 90 – 120 minutes more
it takes its name from one of the biggest cities of Ireland, Cork
the "Cork Haricot” is cooked and removed from the oven
it has been cooking for about 3 hours
at the beginning, half an hour with 392 F…
then the remaining time in 300 F
I may serve it now
at this episode, we made an adaptation from Irish Cuisine to Turkish Cuisine…
we have cooked a haricot recipe
it is totally delicious
it takes longer but actually it is easy to make it
I think that you will like it, if you try it
