Calamaris with Mushroom
Welcome to Mutevazi Lezzetler Cuisine!
because of the too much wishes about the seafood recipes, we are sharing one of them
this recipe is not very common in Turkey
it ingredients calamaris
"Calamaris with Mushroom"
let's see the ingredients before cooking it
we will see all the details then
2.20 pounds of calamari
1.10 pounds of mushroom
3 peppers
3 tomatoes
1 onion, medium size
3 garlic cloves
1 tbsp vinegar
4 tbsp sunflower oil
grinded black paper
salt
and oregano
for the upper side; grated kasar cheese or mozzarella
I'm starting by dicing the onion into small pieces
it is a delicious and easy to cook meal
I'm pouring 3 or 4 tbsp of sunflower oil into the pot
I'm adding the onion pieces into the pot
wile frying the onion, I may slice the garlic
if you mash the garlic cloves by this way…
it becomes very easy to peel them as I mentioned at the previous episodes
I'm peeling 3 garlic cloves by this way
and slicing them very thinly
before the onion pieces turn into pink totally, I'm adding the garlic pieces
I'll add the other ingredients by considering their hardness levels
I'll add the 3 pepper
I'll not cut them into too small pieces, but not too big pieces also
yes, this is the proper size
well, I'm adding the pepper pieces into the pot
I'm stirring it just for a while
I've washed the mushrooms
you may chop them into any size of pieces
but as you know, the mushroom pieces get smaller during the cooking
so please do not chop them into too small pieces
I've washed and rubbed the mushrooms with lemon also, and chopped them
I'm adding it into the pot now
as you know the mushroom includes too much water
so I'll fry the mixture over high heat
well, I'm adding the calamaris immediately
it is very easy to find calamaris everywhere nowadays
you may buy it from a market also
I'm peeling the 3 tomatoes
if you wish, for a more colorful meal…
you may add some tomato paste also
I'll dice them now on
I'm removing the heads
the mushroom pieces have given the juice, and the calamaris became smaller…
so I'm adding the pieces of the 3 tomatoes
after frying it 5 more minutes…
it will be almost done
I'll just add the spices
now, I may add the vinegar
I'm adding 1 tbsp vinegar into the mixture
the measure of the salt depends upon to your taste, so I'm not giving a measure for it
I'm adding the oregano at the end especially, because cooking it too much makes it bitter
and black pepper
it depends upon also
I'll cook it for about 1 or 2 more minutes, then we will see what will happen
after cooking the calamaris, we have a small process more, I want to show it also
I'm waiting for a while to remove make the steam rain
and placing it into a baking pot
it may be glass or earthen
I'm placing it into such a pot
I'm resting it to make its steam rain especially, because…
I'll grate kasar cheese all over
if it touches to a hot meal directly it melts and we don't want it melt directly
after resting it for a while, I'll grate the cheese
now, I'm grating the cheese
it makes the meal more delicious, so you may add more and more
I'm grating about 1 cup of kasar cheese
now I'll cook it in the preheated oven, at 374 F…
until the cheese melts and turns into pink
the meal is removed from the oven, that is the color we want to get
well, I'll serve it hot
