Green Lentil Bun
Welcome to Mutevazi Lezzetler Cuisine!
at this episode we are sharing a different bun recipe
"Green Lentil Bun"
let's see the ingredients list, then we will see how to make it
for the dough: 1/2 pack butter
1 egg and 1 egg white
1 cup warm water
1/4 tsp sodium bicarbonate
flour, as much as the mixture gets in
and 1 tsp salt
for the filling: 1 cup green lentil
1 medium size onion
1/4 tsp crushed red pepper
1 tsp salt
and 5 tbsp vegetable oil
for the upper side: 1 tbsp black cumin
I'm starting by preparing the dough
I'm pouring 1 cup of warm water
into the mixing bowl
I'm adding 1 egg white on it
I'm putting aside the yolk to use it later
I'm breaking 1 more egg…
into the mixture also
I've melted the 1/2 pack of butter and rested it to turn into warm
and 1 tsp salt
I'm mixing the ingredients by fingertips
then, I'm adding flour into the mixture little by little until it reaches the right consistency
and I'm adding the carbonate onto the flour
the dough has reached the right consistency…
it is soft, but not sticking to my hands
I'm covering and resting it for half an hour
while resting the dough, let's prepare the filling mixture
I'm dicing the onion into small pieces
I added 5 tbsp oil into the pot and made it hot
well, I'm adding the onion pieces into that pot now
you may add salt just now to lose the freshness of the onion pieces fast
and I'm mixing
the onion pieces lost their shapes
I've rested the 1 cup of lentil in water for overnight…
and today I've boiled them, until they soften
and now, I'm adding it into the pot
after adding 1/2 tsp crushed red pepper also…
I'm frying it for a few more minutes
the mixture is cooked, now I'm turning off the heat
and I'll rest it for about 15 minutes to cool down
the dough is rested
now I'll divide it into small pieces
as you see, it has a great consistency
sometimes you are asking that “why are we resting the dough?”
because it is easier to roll out the rested dough
and has a better consistency
after dividing the dough into 16 equal pieces…
I'm starting to fill the mixture into the dough pieces
I'm rolling out the dough piece over floured bench by a rolling pin…
until it reaches a size a bit bigger than saucer
as you see the dough is soft
soft dough means, soft bun
I may say it now
this size is enough
I'm placing enough filling mixture onto the dough piece
and folding it from 4 sides…
and by getting the folded side down…
I'll place them into the tray
I want to show it again
you may roll it out by fingertips also
in that case the dough grows more
I'm folding by this way and placing into the tray
I'm folding the last bun also
I'm spreading the remaining yolk all over the buns
after spreading the yolk…
finally I'm sprinkling black cumin all over
as you see black cumin is very beneficial
we learn it also from the hadiths of the Holy Prophet Muhammed
Holy Prophet Muhammed says that…
"black cumin is the cure off all illnesses except death"
well, I've sprinkled the black cumin also
I'll bake them in the oven until they turn into red, the heat is 356 F
the buns are baked and removed from the oven, I may serve them after cooling down a little
