Pickled Beetroots

at this episode, we are sharing a recipe…
from the Mutevazi Lezzetler book…
"Pickled Beetroots"
it is one of the popular recipes…
let's see the ingredients list now…
then we will see how to cook it
4.4 pounds of beetroots
25 - 30 cloves of garlic
4 tbsp rock salt
2 tsp granulated sugar
10 bay leaves
6 cloves
enough vinegar
and enough water
after the ingredients list
I'm starting to prepare the pickle by peeling the beetroots
I'm trying to peel it as thin as I can…
as all the vegetables
after peeling the beetroots…
I'm cutting them, you may cut however you want…
in the book, we have sliced into circles…
now, I'm slicing them into half circles for an alternative
as you see it seems too nice
it is important not to slice them into very thin pieces…
I've peeled the beetroots and sliced them…
I've peeled and pounded the garlic cloves also…
now it is time to fill the ingredients into the jar…
it is the placing process of the pickle…
I'm laying the jar…
to place the ingredients firmly
I'm placing the slices into the jar…
as well as I can
after placing some of the pieces…
I may place the other ingredients also..
some salt..
1clove, I'm braking it as you see
I'm cutting the bay leaves…
into a few pieces as you see
I'm also adding the garlic that I have pounded with some salt also...
I have sugar also, but I will use it later
I'm keeping on placing the slices now
I have 2 tsp of sugar…
I'm adding 1 tsp of sugar now
and the bay leaves again…
by cutting them into a few pieces…
it is important to place the other ingredients…
into the medium layers…
proportionally
the jar is almost full now
I want to place the garlic cloves to the top especially…
I'm placing…
garlic
remaining 1 tsp granulated sugar…
bay leaf…
cloves and remaining salt…
into the jar
I'm adding grape vinegar into the jar…
as 1/3 of the jar…
after the vinegar…
I'm adding drinking water…
by keeping some space in the jar…
it is important to use drinking water
as you see, I did not boil the beetroots…
I'm adding it also…
at the recipe in the book, we have boiled…
the pickle will be ready a bit later, but we are keeping its vitamin by this way
now I'm shaking it for a while…
to mix the water and vinegar
if the ingredients come up…
and stay outside of the water…
it becomes fusty…
so, you may use a fork…
to make the ingredients stay firmly in the liquid
now, it is fixed
I may cover the lid now firmly
the pickle is ready now for resting process…
as I told before, preparing the pickle without boiling the beetroots…
it will take longer than normal
firstly, I'll be resting it at room temperature…
then in a cool place…
for 1 week…
then the liquid will darken…
after resting it 1 week…
in total 2 weeks…
1 week at room temperature and in a cool place for 1 week…
the pickle will be ready…
but if you want to eat the pickle in a short time, you should boil the beetroots at the beginning
it is a nice recipe, no?
