Aubergine Ragout Ogreten
Welcome to Mutevazi Lezzetler video pages!
at this episode, we are sharing recipe
which includes one of the principal ingredients of Turkish Cuisine, eggplant
"Aubergine Ragout Ogreten"
let's see the ingredients now, then we will see how to cook it
6 eggplants
2 onions, medium size
2 tomatoes, medium size
2 banana peppers
8.8 oz minced calf meat
1/2 tbsp tomato paste
5 tbsp vegetable oil
1 tsp salt
for the béchamel sauce; 2 tbsp butter
2 tbsp flour
2 cups of milk
and 1/4 tsp salt
for the upper side; 1 cup of grated kasar cheese
for frying; vegetable oil
I'm starting by peeling the eggplants
you know, we will rest the eggplants in salt water…
for half an hour, after peeling them
I'm peeling multi-colored
I'm adding some salt into the water
and I'm placing the eggplants into the salt water
after placing the last eggplant into the water, I'll rest them for half an hour
I continue by dicing the onions
I have 2 medium size onions
I trying to dice them into small pieces
I have diced the onions, I'll fry them in 5 tbsp of vegetable
I'll fry them, until they lose their freshness
while frying the onion pieces, let's chop the seeds removed peppers
I'm using 1 red and 1 green pepper for colorizing the meal
but, you may use just 2 green peppers also
the onion pieces are fried
now, I'm adding the minced meat
I'll roast it, until it gives its broth and soaks again
I'm adding the chopped peppers now
I'll add the tomato paste about 1 or 2 minutes later
the pepper pieces also have lost their freshness
I generally use the mixture of pastes of tomato and pepper
now, I'm adding the salt
I'm adding grated 2 tomatoes also
tomato is our last addition
I'll be cooking the mixture until the tomato juice reaches paste consistency
that is the view that I want to reach, so the roasting process is over now
I'm turning off the heat and placing the pan aside
while cooling down the mixture…
I've removed the eggplants from the salt water…
washed and drained for a while to dry them
I'm cutting by this way
and I'll fry these pieces
you should choose the bright and smooth eggplants at the shopping
they must not be too hard also, because hard ones have more seeds
these are the tips about eggplant shopping
I've poured the oil into the pan and made it too hot
if you fry the eggplants in too hot oil, they do not soak too much oil
I'll fry them just for a short time, about 1 or 2 minutes, not totally
it is the end of the frying process
as I told, the pieces are partially fried
for removing the extra oil of the pieces, you may place them onto paper towel
but there is no need to paper towel, if you are using grill type plate
the meal has 3 main processes
the name of the meal includes “ogreten”…
this is a description in Turkish Cuisine…
to explain the meal includes béchamel sauce
I'm placing 2 tbsp butter into the pan
to prepare the sauce, but please carefully
I'm adding 2 tbsp of sifted flour into the pan also
I'll be roasting the flour by a the help of a whisker
I think I need to roast the flour for a while more
I'm adding some salt
I may add the milk now
I have 2 cups of milk
it is important to use cold milk
because warm milk makes flour balls, and we don't want see them
I'll be cooking the mixture by stirring constantly, until it reaches milk pudding consistency
the béchamel sauce is ready, you may see the bubbles
the tool may colorize the mixture, so I'm removing the mixture from the stove
all the processes are ready for the meal, now it is time to get them together and bake
I'm placing half of the fried eggplant pieces into the baking tray
eggplant is one of the most popular vegetables of summer season meals
it ingredients A, B1, B2 vitamins
I should remind these tips time to time
I have meat mixture also
I'm placing whole meat mixture over the eggplant layer
and laying it all over
I'll be placing the remaining half of the eggplants over the meat layer
eggplant is very healthy particularly for kidneys, liver and pancreas…
also for the hearth
after placing the second layer of the eggplant…
now, I'm laying the béchamel sauce all over
after laying the sauce all over…
I'll sprinkle the grated kasar cheese all over, it is the hero of the meal
lay it equally please
now it is the final process; baking
the oven is preheated to 374 F
I'll bake the meal, until the cheese turns into red
the cheese has turned into red and I've removed the tray from the oven
after cooling it down for a while, I'll slice and serve it
eggplant also includes nicotine at the top…
