RABBIT IN ESCABECHE

Ingredients
1 rabbit.
1 cup vinegar.
Some black peppercorns.
A few grains of cloves.
6 garlic cloves.
3 bay leaves.
1 sprig of thyme.
1 liter of broth.
Ground white pepper.
Salt, oil.

Preparation
Cut the rabbit into pieces, it Sprinkle with salt and ground white pepper. It fried rabbit with abundant oil. They are putting in a pan.
Add the garlic, bay leaves, cloves, black pepper and thyme. It ing everything and turns on the rabbit.
Add the vinegar and broth gets cook for 1 ½ hours. Leave to stand for 3 days.
