CALAMARES AT ITS INK
½ lbs. Fresh squid.
A bag of squid ink.
3 garlic cloves.
1 ripe tomato.
Clean the squid well below the tap of cold water. Remove the hard part. Remove the legs and wings and book. Turn around and remove the skin.
Remove the bag of ink that is in the stomach, next to the legs. Reservarla.
Finely chop the garlic, onion and tomato.
In a skillet put sofreír oil and the garlic and onion, they are soft, add the tomatoes and salt.
Once echo the sauce add squid and give them a few laps for the skillet.
Put everything in the pot and salt.
Dilute the ink of squid in a little cold water. Fill the bag with squid ink, and add to the mix a little Maizena. When any property dissolved, get the thing in the pot on squid.
To cook for half an hour.
It can serve as a side dish with white rice or fries in squares.
