Zucchini Casserole

2 medium-sized zucchini, peeled and cut into cubes
2 eggs, slightly beaten
1/4 c. milk
1 teaspoon baking powder
2 tbsp. flour
2 c. cheddar cheese, grated
1/2 c. onion, chopped
1/4 c. green pepper, chopped
2 cloves garlic, minced

Preheat oven to 350 degrees. Steam or boil zucchini until almost tender. Drain and cool. In a mediumsized bowl, combine eggs, milk, baking powder, cheese, onion, green pepper, and garlic. Stir in zucchini.
Bake in a greased casserole dish for about 30 minutes. Let it sit for a few minutes before serving.

Zucchini Casserole

• 1 1/2 c. sliced onions
• 3 c. zucchini shredded
• 2 – 3 T. flour •milk
• shredded cheddar cheese

Grate zucchini, put in colander and sprinkle on 1 – 2 t. salt (this will cause zucchini to ooze its liquid). Meanwhile, saute sliced onions in olive oil. Squeeze the zucchini dry (reserve some of this liquid) and add to onions. Continue to saute until both are tender. Add 2 – 3 T. flour. Stir in to cook flour. Add a bit of milk and some of the zucchini liquid if desired. Put in casserole dish and sprinkle cheese on top.
Place under broiler until cheese melts. Can be made ahead and reheated.

Zucchini Casserole

1 lb. small zucchini squash
1 large onion, finely chopped
6 tbsp. butter
2 cups shredded sharp cheddar cheese
1 clove minced garlic
1 tsp. salt
Dash pepper
2 eggs, slightly beaten

Cook zucchini whole in a small amount of water until crisp tender. Cool. Saute onion and garlic in 4 Tbsp butter. Cut cooled squash in cubes (or just circles, its easier) and add to onion. Stir in salt, pepper, and 1 1/2 cups cheese (reserve 1/2 cup for topping). Cool. Mix vegetable mixture with beaten eggs.
Place mixture in buttered casserole dish. Top with reserved 1/2 cup cheese. Bake at 350 degrees for 30 - 45 minutes.

Zucchini Casserole

6 cups diced Zucchini
1/2 cup Onion
1 can Cream of Chicken Soup
1 cup Sour Cream
1/2 cup Margarine
Stove Top Dressing-Cornbread flavor

Bring zucchini and onion to a boil. Drain. Mix maragine, sour cream and soup with seasoning. Heat. Combine with zucchini mix. Butter baking dish. Layer vegetable mix with crumbs. Bake
