1 can black beans, rinse & drain
1 can corn (or equivalent amount of frozen corn)
3 cans chicken broth (3 cups)
1 can northern beans, rinse & drain
1 can pinto beans
1 large jar (quart size) thick & chunky salsa
3-4 chicken breasts, cooked and cut into small bite size pieces
salt & pepper to taste
Combine ingredients in a large stock pot. Bring to a boil & simmer 5 minutes.
Serve with tortilla chips and shredded cheese. This makes a LARGE amount of soup so it is good to share with friends. Also freezes well.
