TAMALE PIE

2 c whole kernel corn
(16-oz can with liquid)
2 1/2 c canned tomatoes (or fresh)
1/4 c tomato paste (opt.)
1 large onion, finely chopped
1 6-oz can pitted olives, sliced or whole
1 1/2 t salt
1 large clove garlic, minced
1 c soaked garbanzos
1/4 c sunflower seeds
1/2 c water or tomato juice
1 1/4 c cornmeal
1/4 tsp each, oregano and sweet basil or 1/2 tsp oregano
2 tsp paprika

Stir-steam onion and garlic in 2 to 4 tablespoons of olive liquid to wilt. Blend soaked garbanzos and water until smooth. Stir all ingredients together and pour into a large covered casserole dish. Bake, covered, at 325o F for about 60 minutes. Uncover, and bake an additional 15 to 20 minutes, or until firm.

TAMALE PIE

Ingredients
I.
2 c. Cooked pinto beans
2 c. Cooked kidney bean recipes" href="http://en.lezzetler.net/kidney-bean-recipes.html"class="postlink">kidney beans
3 tbsp. Tomato paste
2 tbsp. Chile powder

II.
1 tbsp. Virgin olive oil
1/2 c. Onion (chopped)
3 Cloves garlic
1/2 Green pepper (diced)
1/4 c. Cilantro or parsley
1/4 c. Olives (sliced)
1/2 c. Fresh corn
1 lg. Stalk celery

III.
1 1/2 c. Corn meal
2 1/2 c. spring water
1/2 tsp. Chile powder
1 tsp. Light salt

1. Combine dry beans and cook in spring water until tender. This will make approximately 4 cups of cooked beans.
2. Sauté group II and add to group I. Simmer slowly for 30 minutes.
3. Stir group III and cook in a heavy skillet. Bring to a boil, stirring constantly and remove from the heat.
4. Pour bean mixture into a deep baking dish (8x9); spread batter by spoonful on top of beans. Bake in a pre-heated oven at 350 degrees F. for 40 minutes.

Tamale Pie

1/2 cup Olives, sliced
2 cups Frozen corn, thawed
1/2 tsp. Onion powder
2 cloves Garlic, chopped
1 tsp. Mexican Oregano
1 tsp. Paprika
2 tsp. Salt
1/2 cup Green peppers, chopped
2 cups Yellow corn meal
4 cups Stewed tomatoes, slightly blended

Cook cornmeal in blended tomatoes for about 10 minutes.
Add remaining ingredients and mix well. Put into a Pamsprayed casserole dish, cover, and bake at 350 F for 45 minutes.
Remove cover and continue to bake another 15 minutes.

Tamale Pie

1 can corn
1 large can tomatoes
3 Tbs.. oil
1 c. chopped onion
1/2 c. chopped celery
1 lb. ground beef
1 (8 oz.) can tomato sauce
1 cloves garlic
garlic powder
1 Tbs.. sugar
3 tsp. chili powder
1 tsp. salt
1/2 c. shredded cheese
dash of pepper
2 c. water
1 c. yellow corn meal

Heat oven to 375 degrees. Grease 2 quart baking dish. Heat oil; brown onions, celery and ground beef. Mix tomatoes, tomato sauce, corn, garlic, garlic powder, sugar, chili powder, salt and pepper to beef. Cook 20 minutes.
Remove meat from heat, place in baking dish. Pour corn meal mix over meat.
Carefully pour 2 cups of hot water onto the corn meal layer, sprinkle with cheese.
Bake uncovered 40 to 45 minutes.
