Caramel Corn

Sara Mueller

8 cups popped corn
¾ cup packed brown sugar
1/3 cup butter or margarine
3 tablespoons light corn syrup
¼ teaspoon baking soda
¼ teaspoon vanilla

Remove all unpopped kernels from popped corn. Put popcorn into a 17 x 12 x 2 baking pan.
I use the bottom part of our broiler pan. In a 1 ½ quart saucepan, combine sugar, butter, and corn syrup. Cook and stir over medium heat until butter melts and mixture comes to boiling.
Cook, stirring occasionally, to 255º (hard ball stage), about 4 minutes more. Remove from heat. Add soda and vanilla. Pour over popcorn; stir to coat. Bake in a 300º oven for 15 minutes; stir. Bake 5 minutes more. Transfer to large bowl; cool. Good for giving as gifts.

CARAMEL CORN

(This tastes better than Cracker Jacks, and the surprise is that it’s a light, healthy dessert!)
1/2 c unpopped popcorn
1/4 c natural almond butter
or tahini
1/3 c molasses (not blackstrap)
1/4 tsp salt

Pop corn in hot air popper. Heat remaining ingredients in saucepan over medium heat until bubbly. Drizzle over popcorn and stir to coat. Spread out on non-stick cookie sheet, or use Pam spray. Bake at 200o F for 11/2 hours.
May be stored in airtight container.

1/4 c. natural peanut butter
1/4 tsp. salt

POP corn in hot air popper. HEAT remaining ingredients in saucepan over medium heat until bubbly. DRIZZLE over popcorn, and stir to coat. SPREAD out on nonstick cookie sheet, or use Pam spray. BAKE at 200° for 40 min. STORE in airtight container or plastic bag. (For low fat Caramel Corn, drizzle molasses directly over popped corn, stir, and bake as above.)

Caramel Corn

15 cups popped corn
1 cup brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 tsp. salt
1/2 tsp. soda

Heat over to 200 F. Divide corn in two ungreased pans 13x9x2 inches. In a saucepan heat sugar, butter, corn syrup, and salt; stir occasionally until bubbly around edges. Continue cooking over medium heat 5 minutes. Remove from heat, stir in soda until foamy. Pour on popped corn. Stir until coated. Bake 1 hour, stir every 15 minutes.
