Taco Salad

1 pound lean ground beef
1 tablespoon chili powder
1 head iceberg lettuce, chopped or shredded
1 bunch romaine lettuce, chopped
3 large tomatoes, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 bunch green onions, chopped
1 (4 oz.) can jalapeno peppers or 3 to 4 fresh ones,
finely chopped
1 (15 oz.) can red kidney bean recipes" href="http://en.lezzetler.net/kidney-bean-recipes.html"class="postlink">kidney beans, drained
1 (15 oz.) can garbanzo beans, drained
1 (12 oz.) bag shredded Cheddar cheese, divided
2 (14.5 oz.) bags corn tortilla chips, crushed
2 cups Miracle Whip
1 cup ketchup
1 (1.25 ounce) package taco seasoning mix

Brown the beef, drain, season with chili powder and set aside to cool.
Prepare the dressing by whisking the Miracle Whip, ketchup and taco seasoning mix together in a small bowl.
In a large bowl, combine iceberg lettuce, romaine lettuce, tomatoes, green pepper, red pepper, green onions, jalapeno peppers, kidney bean recipes" href="http://en.lezzetler.net/kidney-bean-recipes.html"class="postlink">kidney beans, garbanzo beans, half of the cheese, half of the crushed chips, dressing and cooled ground beef. Mix well, cover and refrigerate.
Just before serving, top the salad with the other half of the cheese and crushed chips. Serve with whole chips on the side.

Taco Salad

1 pound hamburger
½ envelope taco seasoning
1 cup salsa
Shredded cheese (cheddar, colby-jack, etc.)
1 medium head lettuce
tortilla corn chips

Brown and drain hamburger. Mix in ½ envelope dry taco seasoning, then add about 1 cup salsa. Allow mixture to cool. Shred or cut lettuce into bite-size pieces. Crush chips into smaller pieces, reserving enough "perfect" chips to arrange around the edge of your bowl. Mix meat mixture, lettuce, and cheese close to serving time. The amount of cheese used can vary according to your taste. I reserve 1/3 to ½ cup of the cheese to garnish the top of the salad. Just before serving, mix in crushed chips. Tuck the perfect chips in around the edge of the bowl and sprinkle top with cheese.
Notes: You may choose to add other favorite taco ingredients such as olives. (I don't like olives.) The cheese should not be finely shredded for best results. This dish is best served and eaten all in one sitting as the chips will get soggy and the lettuce may wilt slightly. If you won't be able to eat it all at once, only mix together as much as you can eat. If taking salad away from home, mix lettuce and chips in once you get to your destination, if possible.

Taco Salad

1−1/2 Pound Ground beef
Bottled French dressing
1/4 Cup Onion, chopped
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
1/2 Teaspoon Dried oregano, crushed
1/2 Head iceberg lettuce, finely shredded
2 Tomatoes, cut in wedges
8 Ounce Can corn, drained
8 Ounce Can garbanzo beans, drain
1/2 Cup Radish slices
1−6 1/2 oz Package Tortilla or corn chips
1 Avocado, peeled and sliced
4 Ounce Cheddar cheese, shredded
Pitted black olives, sliced
Sour cream

Brown meat and drain off fat. Add 1/3 cup French dressing, onion, salt, pepper and oregano. Simmer 5 minutes. Combine lettuce, tomatoes, corn, beans, radishes and enough dressing to moisten. Toss lightly. For each salad, serve meat mixture over tortilla chips. Top with lettuce mixture, avocado, cheese, olives and sour cream, as desired.

Taco Salad for One

4 oz. ground beef, cooked and drained
2 cups lettuce
1 tablespoon sliced ripe olives
2-3 tablespoons grated cheddar or Monterey Jack cheese
1 tablespoon sliced green onion
2 tablespoons guacamole (pre-made, from deli case)
1 tablespoon sour cream
2 tablespoons old El Paso taco sauce

Dump ingredients in a salad bowl and mix together. Makes one serving, at least for me. Carb count: about 8 grams, depending on the accuracy of food labels and measurements. I’ll probably round it off to 10 for my daily carb count just to be safe.

1 Head Lettuce
1 Can Ripe Olives
8 ounces Cheddar Cheese, shredded
1 medium Onion, diced (may use green onion, shallots)
2 medium Tomatoes, diced
1 pound Ground Beef
1 pkg. Taco Seasoning Mix
1 Avocado, diced
Dorito or Tortilla Chips, crushed
8 oz. Western Dressing

Brown ground beef with taco seasoning mix. Layer lettuce, olives, cheddar cheese, onion, tomatoes, ground beef and avocado. When ready to serve, add dressing and sprinkle with chips.
