Quince Jam
Welcome to "Mutevazi Lezzetler" Cuisine!
at this episode, we are cooking "Quince Jam"
let’s see the short ingredients list at first…
then, we will cook it
5 medium size quinces (about 2.20 pounds)
5 cups granulated sugar
5 cups water
5 cloves
and juice of a lemon
I’ve poured 5 cups of water into the pot…
for boiling…
meanwhile, we are starting…
by cutting the quinces
we have 5 quinces, which have approximately these sizes…
particularly this type of quinces…
using soft ones makes the jam better
after cutting each of them into 2 pieces…
I’m removing the seed beds
as you can notice, I’ve not peeled them…
because, it gives a better taste to jam with the seeds also…
it is also same for the other quince desserts
but, at this episode we are not using the seeds…
not peeling is enough to reach a good taste now
then, we are chopping them…
the pieces must not be too big
we have chopped all of the quinces, by this way…
the water is boiled also…
we can add the quince pieces into the water now…
I’ve not added the sugar yet, guess why?
because, if we add the sugar at the beginning…
the quinces do not soften…
even we boil it for many hours, the quinces stay hard all the time…
now, we are covering the lid of the pot…
and cooking the quinces over medium heat for about half an hour
the quinces are softened by boiling them for half an hour…
but you can arrange the boiling time according to the hardness of the quinces
now we are uncovering the lid…
and adding 5 cups of sugar in it
we have 5 cloves…
we have to remove these after cooking definitely…
we are using the cloves to colorize the jam and add a different taste
we are mixing it for a while…
after it reaches to the boiling temperature…
I’ll uncover the lid and boil it for half an hour more…
because of the pectin…
it will turn to gel…
we are boiling it, until it reaches that consistency
the jam is reaching that consistency…
so, we are adding the juice of a lemon now…
and boiling for about 10-15 minutes…
we’ll check it later…
and decide if it is cooked or not
we have made the extra water evaporate …
by stirring the mixture time to time…
15 minutes passed, after adding the lemon juice…
we are pouring some of the mixture into a cold porcelain plate….
and we’ll wait it for a while to cool down
we have rested it in the plate for about 5 minutes…
as you can see, it flows slowly…
it means that, this cooking time is enough…
we can remove it from the stove…
we can fill it into the jars, after it cools down...
but, we’ll cool it down in the pot…
do not forget to remove the cloves
at this episode, we have cooked "Quince Jam"
it is very easy to cook it, particularly if you have children….
please do not buy the jams…
prepare them yourself…
