at this episode, we are sharing a regional recipe
"Fried Anchovies"
let's see the ingredients list at first…
then we will see how to cook it
1.10 pounds anchovy
1/2 cup of corn flour
7 tbsp vegetable oil
and 1 tbsp salt
as you may see, the ingredients list is very short
we will try to cook a delicious meal…
with this short list
let's see how to cook it
I'm mixing the salt and corn flour firstly
then I'm greasing the skillet with some of the oil
I'm covering the anchovies with the mixture of corn flour and salt
I've removed the heads of the anchovies and cleaned them…
I have washed them well and drained
I'll place them into the skillet
by getting their fins into the middle of the skillet
and firmly, just like a flower
I have placed half of the anchovies
you may use a bigger skillet to fry them all at once...
but our measurements are for 1.10 pounds of anchovy
now I'm pouring the oil all over
and I'll place the skillet over the heat
I'm placing the skillet over the heat…
I'm covering the lid over, it takes very short time to cook anchovy...
it takes 10 minutes maximum...
then, I'll reverse
the anchovies are cooked almost...
I'm shaking the skillet time to time, I'll reverse the anchovies a bit later
now, I may reverse
I'm taking them into the plate firstly...
then by this way, I'm reversing...
as you may see, they are fried so nicely
other sides of the anchovies will be cooked in a shorter time...
I must to emphasize it
the other sides of the anchovies will be cooked in 5 minutes
so you should be careful
I'm covering the lid again
I'm turning off the heat
and I may place them into the service plate
I'll cook the remaining anchovies with the remaining ingredients also
