Fish Au Gratin

Serving Size : 6
2 pounds orange roughy
2 tablespoons margarine
1/4 cup chopped celery
6 green onions -- sliced
4 teaspoons flour
1 teaspoon seasoned salt
1 teaspoon lemon pepper
2/3 cup milk
1 cup shredded Swiss cheese

Preheat oven to 350 degrees. Lightly grease a baking dish.
Wash the fish and pat dry. Place fish in the baking dish.
In a small skillet, melt the margarine and sauté the celery and green onions for about 5 minutes. Stir in the flour, seasoned salt and lemon pepper and cook for 1 minute.
Gradually blend in milk. Add Swiss cheese and cook until the cheese is melted. Pour the sauce over the fish.
Cover and bake for 25 minutes or until the fish flakes easily with a fork.
Serve over rice.

NOTES : You can substitute any white, flaky fish.
