Baked Fish with Lemon Pepper Crust
Serving Size: 4
1 cup dry breadcrumbs
1/4 cup fresh parsley -- chopped
1 teaspoon lemon pepper
1/2 teaspoon salt
1 1/2 pounds flounder fillets -- *see Note
2 tablespoons margarine -- melted
6 tablespoons lemon juice
Preheat oven to 450 degrees.
In a bowl, combine the breadcrumbs, parsley, lemon pepper and salt.
Dip the fish into the melted margarine and coat both sides with the bread crumb mixture.
Place on a baking sheet and bake for 10-15 minutes or until the fish flakes easily with a fork.
Sprinkle with lemon juice and serve.
NOTES: You can substitute any type of firm white fish fillets.
